Grapes were handpicked very early in the morning allowing the fruit to retain its flavour. Only the free run juice was used and once allowed to settle, it was noculated with selected yeast strains and fermented under controlled conditions at 12°C. Grapes were sourced from in the Swartland region. These vineyards are on clay-loam soils. The vineyards are meticulously farmed and managed to yield around 12 tons per hectare.
Fresh and crisp with aromas of lime, green pepper and gooseberry. Tropical passionfruit on the palate with a lingering finish.
